Vegan pierogi (dumplings) with cabbage and mushroom stuffing

Today I want to share with you a recipe for tasty dumplings. A vegan treat – pretty popular and easy to make. The thing I love about dumplings is that you can prepare them in sweet or savoy version. Both taste delicious. This is a recipe for vegan pierogi with cabbage and mushroom stuffing.

These days, when I make vegan pierogi, I always make sure to have more to freeze. I put them in big, 1litre jars and one jar is always enough for at least one yummy lunch.

Dumplings (pierogi) are one of my childhood tastes. Every summer I used to wait for blueberries dumplings and my funny, purple tongue after lunch. My favorite savoy version has always been with cabbage and mushroom stuffing. That’s my favorite dish on Christmas Eve.

What ingredients do I need to make vegan pierogi? (about 50-60 dumplings)

For a dough:

  • 500 grams of flour (I always use spelt flour)
  • 250 grams of boiling-hot water
  • 1 teaspoon of salt
  • 10 grams of olive oil

For stuffing:

  • 300 grams of sauerkraut
  • 200 grams of mushrooms
  • 2 onions
  • 2 garlic cloves
  • salt, pepper
  • olive oil
  • 2 bay leaves

How to make stuffing for pierogi?

  • cook the sauerkraut in water. You can also buy already cooked version so you can skip this point.
  • heat olive oil in a pot
  • add pressed garlic and chopped onion
  • add mushrooms and sauerkraut
  • season with salt and pepper, add bay leave
  • stew for a few minutes until the stuffing is soft
  • drain the stuffing and get rid of bay leaves
  • chop the stuffing on a chopping board

How to make a dough for vegan pierogi?

  • combine flour, salt and olive oil
  • add boiling-hot water
  • knead the dough

I use a food processor to make a dough so I can add boiling-hot water. If you don’t have one just take the hottest water possible.

Knead the dough for a few minutes until is smooth. Roll it with a rolling pin until the dough is a few mm thick. Take a glass and cut circles in the dough. Put the stuffing in the middle of every circle and then fold the circle in half. Press the edges very good and make sure that they stick together. Put pierogi on a floured surface and cover with a clean kitchen towel.

How to cook vegan dumplings?

Boil vegan pierogi in water with salt. Add some olive oil to make sure that they don’t stick while boiling. Once they up in water, boil them for 2-3 minutes. After that time, take them out and put them on a plate. Try to put them separately to avoid sticking.

Vegan pierogi taste delicious with some fried onions and a little bit of olive oil, just after boiling. Or you can fry them later but remember not to fry them for too long! Why? You can read about it here.
